Egg Fried Rice
My attempt at Egg Fried Rice
Ingredients
250g cooked rice
2 eggs - beaten
1 large onion, finely chopped
1 pepper, finely chopped
1 cup frozen sweetcorn
3 cloves of garlic, finely chopped or grated
1 inch fresh ginger - finely grated
1 tbs mirin
1 tbsp soy sauce
Options
Swap peas for sweetcorn
Anything else you fancy! Prawns, ham, cooked chicken or pork, Chinese veg etc
Add a teaspoon or two of sesame oil to the beaten eggs before adding to the pan
Method
Fry the onion until browned. pepper and cook for a further 3 to 4 minutes
Add the garlic and ginger and cook for 1 minute
Add the mirin and cook for 1 minute
Add the rice and soy sauce and cook for 3 minutes until rice is hot throughout
Create a 'well' in the middle of the pan and add the beaten eggs. Allow to start firming up and fold to ensure even cooking. Before fully set stir through the rice and evenly distribute. Serve immediately
