Quick Tomato Based Curry
An easy curry with a tomato base
Ingredients
400g chicken - diced
2 x 400g tin of chopped tomatoes
1 tbs Worcester Sauce
1 tbs tomato ketchup
2 onions finely chopped
1 x green pepper, finely chopped
3 cloves of garlic finely chopped
1 inch ginger (or 2 tsb dried ground ginger)
Chillies - chopped - to taste
3 tsps cumin seeds
3 tbs mild curry paste or 2 tsps. mild curry powder
2 tsp ground cumin
2 tsp ground coriander
1 tsb Kashmiri chilli powder
1/2 tsp cinnamon
Spoonful of yoghurt or crème fraiche
1 - 2 tsp brown sugar or mango chutney
Optional
Any other chilli sauce to add flavour and heat - to taste
Instead of dried cumin, dried coriander, Kashmiri chilli, curry paste (or powder) add ras-el-hanout and\or rose harissa to make a middle eastern curry
Method
Fry the chicken until browned and remove from the pan
Return the pan to the heat and fry the onions until browned
Add the peppers, garlic and cumin seeds and fry for 3 mins
Add the curry paste and fry for 2 further minutes
Reduce heat and add the chicken and remaining ingredients except the yoghurt\creme fraiche
Cook for 2o minutes. Add the yoghurt or creme fraiche and cook for a further 5 minutes
