Pimping Sauce
A tomamato and chilli based sauce that can be used as a side dish or 'pimping' sauce to liven things up. Particularly good as a Patatas Bravas sauce
Ingredients
1 x 400g tin of chopped tomatoes
2 onions finely chopped
3 cloves of garlic finely chopped
1 tbs Balsamic vinegar (or red wine, white wine, cider, rice wine vinegar)
1 tbs Worcester Sauce
1 tbs tomato ketchup
1 tbs tomato puree
1 tsb brown sugar
1 tbs basil
One, some or all of the below to desired heat level
1 tbs chipotle chilli sauce
1 tbs ancho or chipotle chilli flakes
Chillies - chopped - to taste
1 tsp Kashmiri chilli powder
Optional
Any other chilli sauce to add flavour and heat - to taste
Method
Fy the onions until properly browned and soft
Add the peppers and garlic and fry for 3 mins
Add the tomato puree and fry for 2 further minutes
Reduce heat and add the remaining ingredients
Cook on a low heat for at least 3o minutes. The longer this is cooked the deeper the flavour so an hour or more is preferable
